Choosing the Bean

Quists Coffee purchases only the world’s highest quality coffee beans sourced by experts in the field whilst contributing to the social, economic and environmental sustainability of coffee production at origin.

Not only does the individual species of coffee affect the quality and individual characteristics of the green beans but, seed stock, plantation location, soil composition, altitude, weather conditions, fertilization, cultivation, harvesting and processing methods, all have a dramatic influence on the coffee bean flavour.

 

Roasting - the Release of the Beans Essence.

Quists Coffee has developed a reputation for coffee quality and consistency. Guided by a heritage of European expertise, Quists found its niche roasting single origins from all parts of the globe and creating a variety of blends from these origins.

Roasting coffee for maximum flavour development on a consistent basis is one of the great challenges of the coffee trade. Quists’ Roasting Plant operates from a modern, custom built factory in outer Melbourne. A new state-of-the-art 60kg coffee roasting plant from Italy enables Quists to deliver freshly roasted coffee of consistent flavour and texture to meet the needs of a discerning and knowledgeable coffee drinking market. At the same time, Quists are meeting all the new, strict EPA guidelines for omissions and pollutants.

The art of coffee roasting comes from many years of experience. It is during the roasting process that the sugars and other carbohydrates are released from the within the bean, creating a substance known as the coffee oil. Technically, this is not an oil (since it is water soluble) but it is what gives the coffee its flavour and aroma. It is therefore vital, for the roast master to use their knowledge and sensory judgement to know how long to roast each bean to establish its full flavour without overroasting and burning the bean, leading to a bitter and burnt flavour.

 

Blending - the Creation of Aroma and Flaovour.

Quists Coffee offer a range of single origin coffees from around the globe, for those who wish to enjoy the uniqueness of flavour a single varietal offers.

A single coffee bean will genererally not, however, possess the complexity needed for a great espresso. Therefore, our Master Roaster, Jim Baruta, has created a variety of blends from single origins. With an intricate knowledge of each bean, they are carefully blended to create a balanced coffee blend of complex flavours and aromas. Unlike other roasters, Quists roasts each origin individually to allow the unique attributes of each varietal to be maximised, prior to blending.

By combining two or more straight coffees, a new, improved blend may be achieved. If you have not yet discovered your ideal personal choice of coffee blend, experiment!

You might start with with straight coffees and if you find it lacking in some  respect, add to it. Should you wish to have more richness and body a little Mocha might help. For aroma and flavour, you might try adding Costa Rica. For sweetness, add our Own blend and for acidity, add Kenyan or New Guinea.

At Quist’s we blend according to taste, so please ask any of our staff for advice or assistance with blending.

 

Packaging - the Maintenance of Quality, Flavour and Aroma.

Quists Coffee is keen to ensure you get to enjoy all the flavour and aroma we have so carefully prepared for you.

Our single origin or blended beans are available in bags which have a one way valve. This allows the release of gases but retains the freshness and quality of the beans within.

Our freshly ground beans are available in a 250gm vacuum pack for optimum freshness.

Due to popularity, our Miscela Italiana blend when prepared as coffee beans is packaged in 250gm, 500gm, and 1kg bags or as ground in 250gm vacuume bag to suite a plunger, filter or stovetop espresso.

Careful storage of your coffee will protect its freshness.  All coffee, whether beans or ground, deteriorates after roasting, due to exposure to fresh air. Proper storage will help extend the flavour life of your coffee. For coffee which will be consumed within two weeks, store in an airtight container and keep in a cool, dark place. For coffee to be kept longer than two weeks, store in an airtight container in your refrigerator. Whole coffee beans retain their flavour longer than ground coffee since less surface area is exposed to air. A home coffee grinder will help provide fresh coffee every morning.

 

Quists Decaffienated Coffee

Many people are choosing to drink decaffeinated coffee for a variety of personal reasons. However, not all decaffeination processes are the same. You see, in most decaffeination methods, chemical solvents such as methylene chloride or ethyl acetate are used to strip caffeine molecules from the green coffee bean.

Alternatively, the unique SWISS WATER® Process uses pure water to gently remove the caffeine until the coffee beans are 99.9% caffeine-free, while maintaining the bean's distinctive origin and flavour characteristics.

It's decaffeinated coffee without compromise.

Caffeine is a natural occurring substance that is present in the leaves, seeds and fruits of more than sixty different plant species worldwide. Many food and beverage products made from these plants inherently contain varying amounts of caffeine. In addition, caffeine is sometimes added to processed foods and beverages during the manufacturing process to enhance flavour, or in the case of medications, to enhance efficacy.

With respect to an espresso beverage, it should be noted that espresso has a similar caffeine content on a volume basis to brewed coffee. Therefore, decaf espresso will have only trace amounts of caffeine, similar to the caffeine content of brewed decaf.
